INFORMATION
Celeriac is planted out in May and grows steadily through the summer producing a bushy foliage up to 50cm in height. When the days shorten the root starts to enlarge and forms the characteristic round ugly vegetable that is harvested in October and November.

Celeriac is a very ugly but underrated vegetable.  It has a very unique taste that allows it to be the main ingredient for a dish, but the flavour is not too overpowering allowing celeriac to compliment other dishes - hence experimentation with celeriac is a must!

HANDY HINTS
Remove the plastic wrapper and celeriac will store in your fridge for up to 2 weeks.

When preparing celeriac for your meal splash over a watered down lemon juice to keep cut surfaces from going brown before you cook it.

The easiest way to remove the skin of celeriac is with a good sized potato peeler.

If you're trying celeriac for the first time cut it into good sized cubes and boil with potatoes for a superb tasting mash.

Celeriac can be eaten raw as well, just try cutting it into fine strips with a mandolin or a food processor and mix with a mustard vinaigrette for a refreshingly different and substantial salad.
