Fennel is crunchy and slightly sweet, adding a refreshing but strong aniseed flavours to your Italian cooking. Like Marmite, fennel is something that you either love or hate it.
It is a white or pale green bulb with stalks which are topped with feathery green leaves. The flowers grow and produce fennel seeds so the bulb, stalk, leaves and seeds are all edible.
Jack Buck Farms grow 40 acres of fennel which can be irrigated using water from the reservoir. The drilled seed or small plug plants are planted in drillings, 2 weeks apart to sustain the growth to extend the season throughout the late summer and autumn.
The fennel bulb is very easy to damage, so it is carefully hand cut and placed into trays in the field and transported straight to the customer.
